Attieke

Ingredients:

vegetables

1 pack (300g) of cooked attieke 

1 cucumber, chopped

2 small tomatoes, chopped

1 bunch green onions, (4) sliced

½ green pepper sliced

½ red pepper sliced

½ yellow pepper sliced

½ cup fresh chopped mint

2 cups fresh chopped parsley

1 clove garlic, minced (optional)

dressing:

1 fresh lime juice

1 ½ Tbsp extra virgin olive oil

1 tablespoon pepper

2 teaspoons salt, or to taste

Cooking:

 

1. Make "Salad" by adding the dressing to the vegetables.

2. Mix the "Salad" with already cooked attieke.

3. Serve warm or eat cold

4. Can serve with avocado

 

Option for a hot dish: Stir fry mixture salad and cooked

attieke to obtain a hot dish!
